I love to make food that other people enjoy. There's nothing more satisfying to me than having friends over and making food for them that is better than the restaurants! I LOVE to cook and I'm falling in love with video creation. So here is my RUclips channel. Hope you enjoy the videos!
Homemade Mac & Cheese Recipe on a Pellet Grill
This smoked mac and cheese has a homemade cheese sauce with a ton of flavor. WARNING. THIS DISH WILL BE DEVOURED.
Cook 1 pound of bacon
Cook 16 ozs of elbow noodles.
Shred 2 pounds of cheddar cheese
In separate pot Melt 1 TBSP butter, then add 1 TBSP flour.
Stir together until all flour is broken up and mixed well. Cook for 2 or 3 minutes untll it browns.
Add in 1/2 cup of evaporated milk and stir until thickens. add in another 1/2 cup and stir until thickens. Add another 1/2 cup and stir until thickens.
Add in 2 pounds of shredded cheese only about 1/4 pound at a time. You want to add the cheese slowly and stir constantly to make sure cheese melts properly.
Once all cheese is melted pour over...

Chicken Leg Quarters are simple and delicious. For today's recipe I just trimmed off the excess fat and the hip bone. Rub with olive oil and hit it up with your favorite seasonings. I still have it I just don't use it lol. It has a little heat but I wouldn't define it as spicy. It's not like hot sauce is more of a spice. Like a warm chili or curry

I followed this exactly today, but I wrapped it in a towel and put it in a cooler because I had to hold it for 6 hours...but this was absolutely delicious. I've done your ribs too. You're my favorite smoker to watch on RUclips! You should do a pizza😁 I'm gonna use pork leftovers for a pulled pork pizza
That's awesome so glad it turned out great! Yeah if you ever have to hold it long that's a good idea. Sometimes I'll turn my smoker on to 180 the low smoke mode and just let it stay at that temp for a few hours and then take it out to rest. There's ways you can mess with the times to get it all worked out
I've done a chicken pizza before on my channel. The dough recipe wasn't the greatest. I'm not a dough guy. My wife does sourdough pizza crust and it's amazing. But I'll take the recommendation and try it in the future
Going to try this rub - making homemade BBQ freeze dried potato chips (will omit the cayenne for this though).

I always use the normal p settings whatever is stock
ALWAYS wash your chickens with water after package removal

Great question. I don't think they do and never had anyone tell me they thought so. I think with how Cheesy the sauce is and the added mayo and sour cream it really helps keep the noodles moist. If you're worried about it try just 30 minutes

I want to make this Sunday! How big was your pork butt? I'm planning on using a 4-5 lbs pork butt and am wondering how I should adjust the times. Loveeee your recipes!
Have you found any that small? I've always gone to Sam's club, costco, gfs. They're always around 6-10 pounds. Usually always on the heavier side. The times will be shorter the less pounds it is. I would never go by time though. I would smoke one that small at a lower temp and use a good probe. When it hits around 170ish wrap it up and still pull it out when it's over 200 and really tender. Still rest for several hours. In a cooler preferably. Hope this helps
@Nicks-BBQ thanks so much! I'm going to check aldi (on their website it says they're around 4.5 lbs). And I more so meant would it be safe to smoke one that small overnight. I didn't want to wake up to a brick 🤣. I'll probably just get a bigger one tho and have leftovers!

Sorry if you were being sarcastic, but I didn't see your upload about how to clean the cast iron.... how do you clean it?
I never uploaded it sadly. I just kept making bbq videos. Once done cooking let it cool off a bit to its still but able to handle. Rinse with warm water and if there is stuff stuck to the pan you have to scrub it off with a brush. NO SOAP EVER. Once it's clean dry off with paper towels and put it back on the stove to medium heat for 5 minutes. Take it off heat and put a TBSP of avocado oil on it and take another paper towel rub the oil over the whole pan and then put it away like that. The oil helps preserve pan

Yeah of course. Smoke it till it's not runny and creamy. Try some noodles towards the end and you'll know when it's done.
What is chili powder made of? In my country I can't find it in any store around. I'll be really thankfull to know...
It's base is ground red chili's. You can use any ground pepper. Ancho chili Chipotle chili's. Or you can add in a little extra paprika. You'll be fine without it. I've had bbq rubs with just sugar salt and pepper and loved it lol. Hope this helps.

To trim the fat off or no? Have you tried both ways?
Great question. I don't mind the fat so I didn't trim it off. The fat on mine was only about a 1/4 inch thick anyways. If you notice you go spots that are super thick I'd trim it down. Also, if you know your family and friends you have coming over are picky with fat trim it. If not it'll be fine. Hope that helps.

Literally most of the people I know have done this their whole lives.. I mean there's no difference between cooking it on a steak in a frying pan. Marinating a steak with it. And putting it on at the end.. aside from maybe a slight difference in taste and obviously stronger taste.. however it ain't so bad that you got to spit all over a good steak

Making some ribs this weekend! Love the new video setup and format also. What are your thoughts on the rectec vs the xl? The panel on my xl just went out..😰
The rectec is like eating at Texas roadhouse compared to McDonald's with the xl if I'm being honest. But the rectec is super pricy. I have heard pit boss made some upgrades to their newer models though fixing issues they had with inferior models. I'm considering buying one in the future to tryout.
